I wanted to share my favorite lemon frosting recipe with you today. It pairs perfectly with our lemon cake mix and is simple and quick!
1/2 c. Butter (salted), softened
4 oz. Cream Cheese (Philadelphia brand preferred), softened
5 c. Powdered Sugar (C&H brand preferred)
1 medium/large lemon, zested and juiced
1/2 tsp Vanilla Extract (optional)
With electric or stand mixer, beat together softened butter, cream cheese, and lemon zest until well incorporated.
Add in powdered sugar and juice of lemon. Begin to beat on low speed.
Slowly add in milk, 1 Tbs at a time, until correct consistency is reached. You are looking for thick but spreadable.
Taste and add in vanilla if desired, I prefer the pure lemon flavor.
Continue to beat until smooth, about 30-60 seconds.
Will frost a batch of cupcakes, a sheet pan cake, or a 13X9 cake. Frosting must be refrigerated due to cream cheese.
