Killer S'Mores Cookies
These might be the best cookies I've ever tasted, and I have eaten a lot of cookies! These s'mores cookies are quick and easy with our Chocolate Chip Cookie Mix! I have found that I like them best the next day, so I usually make them the night before. One bag of mix will make 11 or 12 cookies, no more, no less. The dough balls need to be the right size so that the graham cracker on the bottom is tucked into the cookie after baking.
1 Chocolate Chip Cookie Mix
1/2 c. softened butter, salted
1 large egg
6 Large marshmallows
2 milk chocolate Hershey's bars
12 squares Graham Crackers, Honey Maid preferred (plus more if sprinkling on top)
Freeze large marshmallows for at least 2 hours. Do not skip this part, this prevents mallows from exploding while baking and disappearing.
Lay out 11 or 12 graham squares on baking sheet. Prepare mix according to directions. Divide dough into 11 or 12 balls.
Remove marshmallows from freezer and slice horizontally in half.
Tuck each half of marshmallow into dough ball and form dough around marshmallow, leaving only a little peeking out as pictured below.
Bake according to package directions, approximately 13 minutes at 365.
While cookies are baking, break Hershey Bar pieces along lines, and then in half.
Remove cookies from oven and immediately top each cookie with 3 broken Hershey bar pieces. Sprinkle on some crushed graham crackers if desired. Let cool completely on pan. Can be stored at room temperature for up to 4 days. Do not stack.
